Have you heard?  Cali-rice is the word!

Yep!  It’s a bandwagon and I’m hopping on it, if you’d like to join 🙂

Califlower rice is very up and coming, and I’m sure you’ve seen many ways to use it.

Just to name a few ways that cali-rice is used to replace not-as-great for you ingredients– breadsticks, fried rice, mashed potatoes… yum! Sign.Me.Up.

But if you’re like me, you’d just like some good dang rice- am I right?

That’s why I’ve created this tasty side.  I love sides that are versatile and can be used in a few different dishes!

The Best Dang Rice (Cali-style)

1/2 head califlower, riced

1 lime

handful of cilantro

salt & pepper to taste

If you’ve never “riced” califlower– just chop it up and process in a food processor until it looks like this:

Place in a skillet with some oil of choice- I used olive oil.  Season to taste with salt and pepper.

After rice has softened, squeeze 1 lime and add chopped cilantro, mix well and remove from heat.

Best served warm with chicken and my favorite- roasted broccoli!

I’ve also had with shrimp and inside soups that call for rice.
